I honestly never made it, but my Mom has quite a few times for Sunday dinner and EVERYONE loves it, but I can honestly say.. your eyes will be bigger than your stomach because it is a very filling pizza.
INGREDIENTS
DOUGH

2 pkgs instant yeast

1 1/2 cups warm water

1/4 cup oil

1/2 cup wheat flour

4 cups flour
-
1 1/2 tsp salt
FILLING
-
12 oz sliced mushrooms
-
1 pkg Frozen Spinach, thawed & drained (10 oz)

20 green olives, sliced
-
4 cups mozzarella cheese, divided
-
2 cups shredded cheddar cheese
-
1/3 pound pepperoni
TOPPING
-
16 oz Spaghetti Sauce
-
Parmesan cheese to taste
DIRECTIONS:
- To make dough, dissolve yeast in water
- Add oil
- Mix in flours and salt
- Knead 5 minutes and place in lightly oiled bowl, turning once to coat all surfaces
- Cover and let rise 1 hour
- Portion to cover bottom and sides of pan
- layer 3 cups of mozzarella over crust
- Spread out spinach over cheese and add mushrooms, then olives
- Cover with remaining 1 cup of mozzarella and cheddar
- Cover completely with the pepperoni
- Roll out the other half of dough and lay on top of filling.
- Pinch edges together to seal
- Prick top several times with fork
- Bake 30 minutes @ 350 degrees
- Spread top with sauce and sprinkle with Parmesan
- Bake additional 10 minutes
Makes one 14″ pizza
