Tried & True Tuesday ~ Double Crusted Stuffed Deep Dish Pizza (VERY filling)

I honestly never made it, but my Mom has quite a few times for Sunday dinner and EVERYONE loves it, but I can honestly say.. your eyes will be bigger than your stomach because it is a very filling pizza.

INGREDIENTS

DOUGH

  •  2 pkgs instant yeast

  • 1 1/2 cups warm water

  • 1/4 cup oil

  • 1/2 cup wheat flour

  • 4 cups flour

  • 1 1/2 tsp salt

FILLING

  • 12 oz sliced mushrooms

  • 1 pkg Frozen Spinach, thawed & drained (10 oz)

  • 20 green olives, sliced

  • 4 cups mozzarella cheese, divided

  • 2 cups shredded cheddar cheese

  • 1/3 pound pepperoni

TOPPING

  • 16 oz Spaghetti Sauce

  • Parmesan cheese to taste

DIRECTIONS:

  1. To make dough, dissolve yeast in water
  2. Add oil
  3. Mix in flours and salt
  4. Knead 5 minutes and place in lightly oiled bowl, turning once to coat all surfaces
  5. Cover and let rise 1 hour
  6. Portion to cover bottom and sides of pan
  7. layer 3 cups of mozzarella over crust
  8. Spread out spinach over cheese and add mushrooms, then olives
  9. Cover with remaining 1 cup of mozzarella and cheddar
  10. Cover completely with the pepperoni
  11. Roll out the other half of dough and lay on top of filling.
  12. Pinch edges together to seal
  13. Prick top several times with fork
  14. Bake 30 minutes @ 350 degrees
  15. Spread top with sauce and sprinkle with Parmesan
  16. Bake additional 10 minutes

Makes one 14″ pizza
